Aloo Ghobi

A simple, quick authentic Indian meal - tasty, nutricious and very satisfying.

Ingredients:

  • 1 Cauliflower - chopped into even sized florets
  • 4 medium or 3 large Potatoes - either peeled or scrubbed and chopped into even cubes
  • 2 large Onions - finely sliced
  • 1 tbsp Cumin Seeds
  • 1/4 cup of Coriander Stalks - chopped fresh
  • 1 tsp Ground Tumeric
  • 1 tsp Freshly Grated Ginger
  • 1 Clove of Garlic - freshly pressed
  • 2 cans of Tomatoes - chopped or using a cheese grater, rubbing them up and down until they become chopped
  • 1/2 tbsp Ground Coriander - enough water to just cover
  • 2 Whole Chillies - either dried or fresh finely chopped
  • Salt and Pepper - to taste
  • 1/2 cup Fresh Coriander

This is a pretty quick dish to make.
First heat some oil or Ghee in a medium sized pot. Add the onions and the garlic. Cook until onions are limp. Then add the cumin seeds, cook until they start to pop. Add the tomatoes and the tumeric and coriander, stalks and dry. Stir until all added ingredients are well incorporated. Then add the potatoes and cook for a few minutes. Now add the cauliflower and ginger and stir adding the water to just cover. Bring to the boil and then simmer until cooked. Season and add the fresh coriander leaves, turn off the element and cover for 5 minutes. Serve with rice and some plain unsweetened yoghurt for an authentic Indian meal.
