Hummus

This is one of the yummiest and easiest dip/spreads I have come across in my culinary wanderings. Enjoy this with corn chips, on roasted vegetables or as part of a middle eastern spread - I will come back to this one in the near future. You can jazz this up by adding different spices, adding roasted peppers or even the earthy beetroot.

Ingredients:

  • 2 cans of Chickpeas/Garbanzos - or any other white bean, rinsed and drained
  • 1/4 cup each of Fresh Lemon Juice
  • A good quality Olive Oil - I use extra virgin
  • 3 tbsp Tahini - available at all good supermarkets!
  • 1/8-1/4 tsp Fresh Chopped Garlic
  • Salt and Pepper - to taste
  • 1/2 cup cold water - to add as you blend all of the above ingredients together

Put all of the above ingredients together in a blender or food processor and blend until smooth and a good dip/spread consistency. Season to taste and enjoy. Will keep in the fridge for at least 4-5 days.
