Summer Couscous Salad
This is a delicious and well balanced main meal salad.Just add some pita bread to complete this dish.
For the Salad:
- 3 cups water
- 1 tsp each turmeric, salt and harissa
- 2 tbsp pesto ( try some fresh coriander pesto if you like)
- 2 cups instant couscous
Place the water, turmeric, salt, harissa and pesto in a pot. Bring to the boil and add the couscous. Remove from the heat and stir. Cover to steam for 8-10 minutes.
For the Garnish:
- 1-2 cups fresh grapes
- 1/2 cup dried apricots, chopped
- 2 spring onions, finely chopped
- 1 cup almonds, toasted
- 1 cup dates or figs, finely chopped
- juice of 1 orange
- 1 cup cooked chickpeas
- 2-3 tbsp fresh mint, finely chopped
Add all the garnishes to the couscous and toss ina large bowl. Serve on a large platter with some lemon wedges and toasted pita bread.
